    Instructions
    1. Soften the onion and chili in a knob of butter.
    2. Stir in the beaten eggs and a splash of milk.
    3. When nearly scrambled, gently stir in a good handful diced tomatoes followed by some coriander leaves.
    4. Season and eat with toast.
