Smoked Chicken in Hot Sauce with Risotto


    Smoked chicken in a hot sauce with risotto is, on the one hand, a very spicy dish, but on the other side of the plate, a mild risotto awaits you.

    As complex as the name of this recipe may sound, this dish is, in fact, very easy to prepare.

    You need a little care and love to make a good risotto and a little time to season the chicken and roast it.

    So don’t look for lack of time as a reason not to make this wonderful dish.

    For the risotto
    1. Heat the butter and olive oil in a saucepan over medium heat.
    2. Add the onion and garlic and cook for 3-4 minutes or until onion softnes.
    3. Add the rice. Cook, stirring, for 1 minute or until grains appear glassy.
    4. Reduce heat to a low, add the stock and water, 1 part at a time.
    5. Stir with wooden spoon until liquid had been absorbed.
    6. Repeat with remaining stock and water. This take about 25 minutes.
    7. Add salt and pepper to taste.
    8. Add vegetables to rice with the last part of stock. Cook 2-3 minutes. Add salt and pepper.
    9. Set aside.
    For the smoked chicken
    1. Combine hot chilli sauce, butter, vinegar, Worcester sauce and garlic powder in a samll saucepan over low heat.
    2. Cook, stirring often until butter is melted and sauce is smooth. Remove from heat.
    3. Transfer smoked chicken to a large bowl. Stir in 1/2 of the sauce until chicken is evenly coated.
    4. Grill coated chicken until starting to get crispy, 5-7 minutes per side.
    5. Transfer to a bowl and stir in remining sauce.
    6. Serve with risotto and enjoy!
