Chicken jambalaya is spicy rice pot with chicken, peppers and tomatoes.

Jambalaya is a Creole rice dish of West African, French (especially Provençal cuisine), and Spanish influence, made of meat and vegetables mixed with rice.

Traditionally, the meat always includes sausage.

We chose the chicken, but we contrasted it with the spicy sausage.

If you are a fan of rice dishes this is ideal for your dinner.

Mild, spicy and hot at the same time … perfect…

Chicken Jambalaya

Ingredients
  

  • 1 tbsp olive oil
  • 17.6 oz chicken breasts chopped
  • 1 onion diced
  • 1 red hot pepper chopped
  • 2 garlic cloves crushed
  • 1 spicy sausage chopped into circles
  • 1 tbsp Cajun seasoning
  • 8.8 oz long grain rice
  • 1 can chopped tomato
  • 1 1/2 cups chicken stock

Instructions
 

  • Heat 1 tbsp olive oil in a large pan and fry chicken for 10 minutes.
  • Remove and set aside.
  • Add remaining olive oil in the same pan and fry onion for 5 minutes.
  • Add red pepper, crushed garlic, sausage and 1 tbsp Cajun seasoning. Cook for 5 minutes more. Remove garlic cloves. Tip: For Cajun sesoning mix 2 tbsp paprika, 2 tbsp garlic powder, 2 tbsp oregano, 1 tbsp salt, 1 tbsp onion powder, 2 tsp black pepper, 2 tsp cayenne.
  • Stri the chicken back, add rice, tomatoes and chicken stock.
  • Cover and simmer for 20 minutes until rice is tender.
  • Serve and enjoy!
