Ingredients
  

  • 4 carrots medium, peeled and roughly chopped
  • 250 g vanilla Greek yogurt
  • 1 1/2 cups unsweetened vanilla almond milk
  • 1/4 cup toasted shredded coconut plus 2 tbsp
  • 1/4 cup walnuts plus 2 tbsp
  • 1 tbsp honey
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/2 cup ice (optional)

Instructions
 

  • Combine all ingredients in blender until smooth. Serve immediately.
