A simple and easy to make macaroni salad loaded with fresh avocado and apple wood smoked bacon tossed in a lemon-thyme dressing – the best macaroni salad we’ve made so far!

This recipe can easily be considered as a main dish because of its nutritious values.

We experimented by adding additional spices and the result wasn’t bad, but in the end, thyme, salt and pepper is all you need alongside lemon zest.

Avocado and Bacon Macaroni Salad

Ingredients
  

  • 12 ounces pasta
  • 5 slices bacon diced
  • 2 avocados halved, seeded, peeled and diced
  • salt and freshly ground black pepper to taste
  • 2 tsp thyme leaves for garnish

FOR THE LEMON THYME DRESSING

  • 1 cup mayonnaise
  • 1/4 cup freshly squeezed lemon juice
  • 2 tbsp lemon zest
  • 1 tbsp sugar
  • 1 tsp thyme leaves
  • salt and freshly ground black pepper to taste
  • 1/3 cup olive oil

Instructions
 

  • To make the dressing, combine mayonnaise, lemon juice, lemon zest, sugar and thyme, season with salt and pepper and add some the olive oil. You can whisk it yourself or use the food processor. Important thing is to get the right consistency.
  • In a large pot of boiling salted water, cook pasta according to package instructions, drain excess water.
  • Heat a large pan over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
  • In a separate bowl, combine pasta, bacon, avocado, lemon-thyme dressing, salt and pepper to taste.
  • Serve warm, garnished with thyme.

Notes

For this recipe use your favorite type of paste, we recommend fusilli, "elbow" or penne
