Ingredients
1lbFoglie d'ulivo pasta
1lbchicken breatsboneless
2red bell pepperssliced in cubes
3.5ozspinachfresh or frozen
1/2oniondiced
1/2cupwhite wine
2tbspolive oil
salt and pepperto taste
basilfresh, chopped
Instructions
Cook pasta according to instruction.
Heat olive oil in a large pan and fry the onion. Add peppers.
When vegetables are softened, add chicken is cooked.
Add white wine and let it evaporate, you will need a couple of minutes.
Add spinach and cook for another couple of minutes. Add salt and pepper.
Add basil and pasta, and leave on low heat so pasta can absorb the flavors.
Serve warm and ENJOY!

Since pasta needs to be in a sauce for a couple of minutes, make sure it is cooked al dente and not overcooked.You can see that there is no special sauce for this recipe, juices from vegetables are sufficient in this case, but if you want to make a creamier dish you can add heavy cream. That addition will make this recipe less healthier but more creamier.
