Marinade pork steaks with 2 tbsp of olive oil, lemon zest, garlic, sage and generous sprinkle of salt and pepper. Finish with juice for 1/2 lemon. Set aside.
Use remaining olive oil and heat the grill pan.
Cook the steaks for 2 minutes on both sides, and then for 10 more minutes.
For the remaining 10 minutes of cooking, flip the steaks more occasionally.
When steaks are nearly cooked, squeeze the juice from other half of the lemon.
Serve with potatoes and salad of your choice.

It is maybe for the best to leave steaks in the refrigerator over the night. They will for sure be even juicier, and aroma and taste will be more intensive.
