Ingredients
3-4lbspork loinboneless
2tbspall-purpose flour
1tbspherbes de Provence
2tbspolive oil
2onionssliced
1cupapple cider
1cupbeef stock
2bay leaves
2applespeeled and chopped
1cupprunespitted
saltto taste
pepperto taste
Instructions
Mix flour, herbes de Provence, salt and pepper and rub it all over pork.
In a large pan, heat oil. Brown pork roast on a medium-high on all sides before you put it in a slow cooker.
Place roasted pork in a slow cooker. Add onions, apple cider, beef stock and bay leaves.
Cook, covered, on low for 3 hours.
Add apples and prunes.
Continue cooking, covered, on low for 1 to 1 and a half hour longer or until apples and pork are tender.
Remove the roast, onions, apples and plums to a serving platter. Let stand 15 minutes before slicing.

You can use apple juice apple juice as a substitute for apple cider if you don;t have any.Herbes de Provence is now a well known mix of spices, but to save you time, and also if you don't have any, it's a traditional french mix of thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and bay leaf.
