Instructions
Put 2 tbsp olive oil in a frying pan over medium heat.
Add chopped onion, celery and garlic. Fry 10 minutes.
Add meat and cook 8 minutes. Stirring frequently. Add thyme and parsley. Season with salt and pepper.
Transfer contents to a large bowl and set aside until completely cool.
While topping cools, make knots.
Put the yeast in milk and water with sugar. Let the yeast make a foam.
Mix the flour, salt and yeast mixture.
Add the olive oil and knead the dough.
On a lightly floured surface, divide dough into 2 even pieces.
Working with one piece at a time, roll or stretch into an strip about 8 inches long and 4 inches wide.
Cut it crosswise into 12 strips.
Repeat with other half of dough.
Tie each strip into a knot.
Grease the baking dish with oil.
Dip each knot in a bowl with the meat and arrange in the baking dish.
Transfer knots to baking dish.
Preaheat oven to 425 F (220°C) and bake until golden about 25-30 minutes.
When knots are almost ready, melt 2 tablespoon of butter in the microwave.
Remove knots from oven and immediately brush on butter.
Serve with sauce on the side and enjoy!
Tips: Serve with gravy and cranberry sauce for Christmas dinner.
