Instructions
Heat 1 tbsp olive oil in a large pan and fry chicken for 10 minutes.
Remove and set aside.
Add remaining olive oil in the same pan and fry onion for 5 minutes.
Add red pepper, crushed garlic, sausage and 1 tbsp Cajun seasoning. Cook for 5 minutes more. Remove garlic cloves. Tip: For Cajun sesoning mix 2 tbsp paprika, 2 tbsp garlic powder, 2 tbsp oregano, 1 tbsp salt, 1 tbsp onion powder, 2 tsp black pepper, 2 tsp cayenne.
Stri the chicken back, add rice, tomatoes and chicken stock.
Cover and simmer for 20 minutes until rice is tender.
Serve and enjoy!
