    1. Heat some oil in a large pot and fry the onion for about 2-3 minutes.
    2. Then add the garlic and cook for one more minute.
    3. When the onions soften well, add the remaining ingredients except for the fresh spinach and cherry tomatoes.
    4. Cook for about 20 minutes. Add water as needed. Stir from time to time.
    5. Add the cherry tomatoes and the spinach 5 minutes before the end and cook.
    6. Season with salt and black pepper.
