French Pork Loin with Apples and Prunes

Ingredients
Instructions
  1. Mix flour, herbes de Provence, salt and pepper and rub it all over pork.
  2. In a large pan, heat oil. Brown pork roast on a medium-high on all sides before you put it in a slow cooker.
  3. Place roasted pork in a slow cooker. Add onions, apple cider, beef stock and bay leaves.
  4. Cook, covered, on low for 3 hours.
  5. Add apples and prunes.
  6. Continue cooking, covered, on low for 1 to 1 and a half hour longer or until apples and pork are tender.
  7. Remove the roast, onions, apples and plums to a serving platter. Let stand 15 minutes before slicing.

You can use apple juice apple juice as a substitute for apple cider if you don;t have any.

Herbes de Provence is now a well known mix of spices, but to save you time, and also if you don’t have any, it’s a traditional french mix of thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and bay leaf.
